This the best bread in the world! And it is famous... among our family! Though I'm sure it would be famous if we entered it in any fairs! It is a rather long process, but is very rewarding, so is worth the work. My family is kinda large so we make 4 loaves at a time, but you can always downsize the recipe. ( I will put a recipe for 2 loaves below, then it will be easier make smaller!)
This dough was a little tough, you want it to be a almost sticky, a little soft. And you only use a part of the flour right away, like if I use 12 cups of flour, for 4 loaves, I only use 9 cups right away, and when almost everything is mixed in, then I add the last three cups. If you have a bread paddle, that works best. Here is the recipe for 4 loaves:
12 c. flour
1 T. lecithin
2 T. yeast
4 T.gluten
1 t. salt
1/4 t. vitamin C
4 c. water
1/2 c. oil
1/2 c. honey
Now the recipe for 2 loaves:
6 c. flour
1 1/2 t. lecithin
1 T. yeast
2 T. gluten
1/2 t. salt
1/8(or half of a 1/4) t. vitamin C
2 c. water
/4 c. oil
1/4 c. honey
1. Mix all ingredients together.
2. Shape into a smooth ball and place in a large greased bowl and cover with a towel. let rise for half an hour
3. Separate into four sections and shape each one into a smooth loaf.
4. Let rise in bread pans for another half of an hour.
5. Bake at 350 for 30 minuets
